I love when Janira comes to hang out at my place because it gives me an excuse to try out new recipes or something I wouldn’t ordinarily cook. Also, summer squash — a pretty light green color here in Ukraine — is abundant and cheap right now so I’ve been looking for creative ways to cook it (ragout gets old after a while). This recipe, like my other favorites, is easy, nutritious, and delicious.
Summer Squash-Potato Pancakes
- 1 summer squash, grated
- 1 medium potato, grated
- 1/2 onion, diced
- 1 egg
- 1 tbsp. flour
- dried basil and pepper, to taste
- Combine all ingredients in a bowl, mixing well to coat with egg and flour.
- Flatten tablespoonfuls into a medium-hot oiled pan and cook on each side to desired doneness.
- Serve with salty cheese or sour cream.
