Recipe: Summer Squash-Potato Pancakes

I love when Janira comes to hang out at my place because it gives me an excuse to try out new recipes or something I wouldn’t ordinarily cook. Also, summer squash — a pretty light green color here in Ukraine — is abundant and cheap right now  so I’ve been looking for creative ways to cook it (ragout gets old after a while). This recipe, like my other favorites, is easy, nutritious, and delicious.

Summer Squash-Potato Pancakes


  • 1 summer squash, grated
  • 1 medium potato, grated
  • 1/2 onion, diced
  • 1 egg
  • 1 tbsp. flour
  • dried basil and pepper, to taste


  • Combine all ingredients in a bowl, mixing well to coat with egg and flour.
  • Flatten tablespoonfuls into a medium-hot oiled pan and cook on each side to desired doneness.
  • Serve with salty cheese or sour cream.
